From Solo Lisa's Kitchen: Breaded Chicken


The nice thing about a simple recipe like breaded chicken is that you can make substitutions with whatever ingredients you have on hand and the dish will still turn out okay. After consulting a recipe for whole wheat-crusted chicken breast cutlets on Epicurious, I went to work making my own version. The breading mixture I ultimately used consisted of white toasted bread, pecorino romano cheese, lemon-infused sea salt, and pepper. Although the recipe calls for a combination of mayonnaise and Dijon mustard as the wet mixture, I substituted a beaten egg for the mayo.

So how'd it turn out? Not bad at all. I think I'm going to add this recipe to the lunch recipe rotation.
