For making...Mmm, that pasta looks and sounds good!<br /><br />For making the eggplant curry look more photogenic... I'd suggest adding more colours. Carve up a green pepper and arrange around the edge of the dish (blanched if you want the green to really pop!). And sprinkle the top of the dish with some paprika to add some red tone.
