From Solo Lisa's Kitchen

My culinary experiments from the last two weeks photographed and captured here for your viewing pleasure. Enjoy!

After taking the photo, I realized that eggplant curry is not exactly the most photogenic food in the world. Cupcakes and muffins look darling and chicken appropriately browned can appear pretty appetizing, but curry on its own isn't exactly the prettiest sight to behold. Luckily, my attempt at Indian cuisine wasn't too bad. I got the recipe off of allrecipes.com and substituted fresh ginger and garlic in place of ginger garlic paste. Next time, though, I think I'd be better off using the paste so that the flavours meld better with the rest of the curry.

This is my modified take on a recipe from Donna Hay's New Food Fast: pasta with shredded chicken and fried basil. The recipe called for pasta tossed with shredded chicken breast and fried basil leaves, then topped with pepper, feta cheese, and lemon juice--simple and fresh, but without the latter three ingredients, definitely bland. I added thyme for extra aromatic flavour and it made such a difference.

Do you cook? Have you made a yummy dish recently that deserves to be boasted about and shared? Please tell me in the comments!

  1. I don't cook, but may have to track down that pasta recipe for our house chef, Husband Mike.

  2. Mmm, that pasta looks and sounds good!

For making the eggplant curry look more photogenic... I'd suggest adding more colours. Carve up a green pepper and arrange around the edge of the dish (blanched if you want the green to really pop!). And sprinkle the top of the dish with some paprika to add some red tone. Paprika is a amalgamating spice, so it should only serve to bring out the other flavours in the dish more, not change the flavour.

  3. Yup, I just made a braised pork belly lately which I blogged about at my Les Filles Giada et Cairo blog. It's like a heart attack on a plate, but I enjoyed making (and eating) it!

  8. OH YUM. I'm not a big fan of cooking. I'm a baker. But I've been trying to get into it more! I'm all about a dish with shredded chicken in it!

  10. thefatandskinnyonfashion, the recipe instructions say you should put two tablespoons of olive oil in a frying pan over high heat and fry the basil leaves until crisp. It didn't work very well the first time I made this dish, so the second time around I just took the chicken out of the pan, then sauteed the basil leaves in the leftover oil until they were a vibrant green.

  12. i love eggplant with curry though I usually have it with green, not yellow curry. i know you don't think the photo looks good but that still looks yummy to me.

i have one of donna hay's cookbooks (called cooking from the pantry or something like that) and it has a ton of simple pasta recipes in it. I love simple pasta recipes that take no time to whip up at all.
